*3  Observed the following potentially hazardous foods to be held at improper temperatures: Large pot of beef was reading 50-55. Same pot was said to be cooked yesterday at 6pm. Provide for all potentially hazardous foods to be cooled from 140°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours for a total cooling time of 6 hours. Cooling methods can be limiting depth of food to 4 inches or less, agitation, quick chilling or water circulation external to the food container. Immediate/Onsite
*7  Observed the following sources of contamination: Cut veggies were stored below a box of raw pork loin in the walk-in cooler. Provide for all veggies to be stored above and separate from raw food items. Immediate/Onsite

Observed the following food products to have improper/no labeling information: Some seasonings in small plastic containers stored on shelf across from the cooking area were not labeled. Provide for all seasonings to be labeled with name. Next Inspection
Observed the following food products to be improperly stored: To cases of whole veggies were found stored directly on the floor in the walk-in cooler. Provide for all food items to be stored six(6) inches off of the floor. Next Inspection
